Chao Shan Hao Lao


This is one of Chao Shan's famous dishes. It's name is Chao Shan Hao Lao, and it's very delicious. I like it very much. My mother often makes it for me. The main ingredients of this dish are fresh oysters, duck eggs, amylum (a type of starch), chilli sauce and axunge (which is the inner fat of a duck or goose).The color of this dish is bright red, and it looks very beautiful. It is salty and spicy, and it feels a little brittle: not too crisp, not too soft. Whe you taste a bit of this dish you will feel that the oyster is very tasty, and then add some chilli sauce - it's wonderful. I can't help drooling! Yummy yummy!
